i found this recipe on the blog mennonite girls can bake
and it was easy & delicious
6 boneless, skinless chicken breasts
1 24oz jar of mexican style salsa
1 can corn
1 can black beans (my tasty addition)
pour some salsa into the crock pot. place the chicken breasts in the pot and cover with the rest of the salsa. cook on low for 7 hours (or on high, just reduce baking time). within the last hour, add the corn & the beans.
this can be used now for a few different meals. just served over rice. or put into a tortilla for a wrap. place on a tortilla with cheese, fold in half to make a quesadilla.
it is very tasty. and easy. perfect.
