cornbread

i just got back from a wonderful trip to visit my friend emily
we were able to celebrate our birthdays together, and she gave me a beautiful tea towel, a fabulous cast iron pan AND a delicious recipe for corn bread to make in my pan.

i made it the other day, and it was so tasty. at the end of the recipe emily wrote "eat with butter and honey and think of emily" and that is just what i did.

cornbread

1 1/2 cup buttermilk
2 eggs
1 cup cornmeal
1/2 cup flour (white or whole wheat)
3 tbsp sugar (brown is nice)
1 tsp baking powder
1 tsp baking soda
3 tbsp butter (or oil)
dash salt

heat oven to 450. mix wet. mix dry.
put butter (or oil) in pan and melt in oven. coat pan and pour extra butter into wet ingredients. mix wet and dry. don't over mix. don't worry that it looks very wet.
pour into pan.
bake for 22-25 minutes on middle rack.
eat with butter and honey and think of emily - or me!
