classic fudge cake

i bought this delicious smelling bubble bath a few months ago. i love it. i pour it into the tub, sink into the hot water, and dream about eating mounds of fudge cake.. mmmmm the smell is just fabulous. anyway, on this particular line of bubble bath, named after food & treats, they print the recipe on the bottle. i decided that since it smells soooo good, i should try and make it.

i decided to make it on Jay's birthday to share with Leah & Ev at supper time. it was delicious and we enjoyed it together while thinking of the most special boy.

i highly recommend this cake, with peanut butter buttercream frosting (a random idea from me!) - don't let the amount of sugar scare you ;)

classic fudge cake

ingredients

2 1/4 cup flour
2 tsp baking soda
1/2 tsp salt
3/4 cup sour cream
1 cup boiling water
1/2 cup butter
2 1/2 c brown sugar
3 eggs
1 1/2 tsp vanilla
3 1/2 oz chocolate melted

Cream together butter and sugar. Add eggs one at a time. Beat in the vanilla and melted chocolate. Mix in sour cream and dry ingredients until combined. Stir in boiling water. Bake in greased pan. Bake for 35 minutes at 350 degrees. Let cool.

Peanutbutter Buttercream Frosting

1/2 cup peanut butter
1 1/2 cup icing sugar
1/4 cup milk (add more as needed)

whip together with a mixer until desired consistency. add more sugar for a thicker frosting or more milk for a thinner frosting. Add more peanut butter if it doesn't taste peanuty enough. Spread on cake once it is cooled.
